French Silk Pie

Ingredients: For the Crust: – 1 1/2 cups chocolate cookie crumbs (you can use chocolate graham crackers or chocolate wafer cookies) – 1/3 cup melted butter

For the Filling: – 1 cup unsalted butter, softened – 1 1/2 cups powdered sugar – 4 ounces unsweetened chocolate, melted and cooled – 1 teaspoon vanilla extract – 4 large eggs

Prepare the Crust: – In a bowl, combine the chocolate cookie crumbs and melted butter. – Press the mixture into the bottom and up the sides of a pie dish to form the crust. – Chill the crust in the refrigerator while you prepare the filling.

Make the Filling: – In a large bowl, beat the softened butter and powdered sugar until light and fluffy. – Add the melted and cooled unsweetened chocolate, along with the vanilla extract. Mix well.

– Add the eggs one at a time, beating well after each addition. Continue beating until the mixture is smooth and creamy. – Pour the filling into the prepared crust.

Serve: – Once the pie is set, remove it from the refrigerator. – Before serving, pipe or spread whipped cream on top of the pie. – Optionally, garnish with chocolate shavings or curls.
